Scratch baking made easy… from a box?

So, one of the things that Baby Miss asked for, for her Princess Party was pink pudding. Now, being as how I like to jazz everything up a bit I decided to do little cups of pudding for the kids, but I wanted to add to it. I wanted a texture in the cup but time was of the essence. The party was the next day and I had a lot to do. My Mother-in-Law suggest baking a cake and adding pudding to it, but I am particular on cakes and normally ask her to bake from scratch. But, again, time was not on my side. This is when I remembered that I had received an assortment of  Immaculate Baking Dry Mix from Platefull Coop, including, Immaculate Baking All Natural Brownie Scratch Baking Mix, Immaculate Baking All Natural Yellow Cake Scratch Baking Mix, Immaculate Baking Gluten Free Double Chocolate Cookie Mix, and just what I needed, a box of Immaculate Baking All Natural Chocolate Cake Scratch Baking Mix. I also remembered reading that the Immaculate Baking Mixes were so simple they were like scratch baking made easy. So, why not?

Immaculate like baking from scratch

I read the directions on the box of Immaculate Chocolate Cake Mix and Baby Miss and I went to work. Needing just eggs, butter, and milk, I was ready to go. So far this was totally scratch baking made easy.

Baking made simpleAfter combining the ingredients we mixed it for about two and a half minutes then put it in the oven. If this wasn’t scratch baking made easy, I don’t know what is… ha! Now, the directions were clear to use a 13″ x 9″ or Two 9″ Rounds tins, but I only had one round pan, as the rest of my baking supplies were being used for other party foods. Ugh… But knowing that I wasn’t going to use the cake as a cake, I wasn’t concerned with how it would look. 

baking made easyWhile the cake was cooling we made some instant pink pudding and some yummy whipped cream. Then we added equal amounts of the pink pudding to clear cups. By this time the cake had cooled down so we crumbed the cake and topped the pudding with the cake crumbles.

cake pudding cupsNow, of course we had to try the cake and it was so light, airy, and fluffy that Baby Miss called to her siblings to come down and try some. Ha! Pretty in pink cake pudding cups

In the end the Pretty in Pink Cake Pudding Cups came out perfectly. The cake added just the right amount of yummy texture to the cups.
