When my Mother-in-Law moved in with us one of the first things she said we needed was a KitchenAid Mixer. She had one back in Maryland, but had thought I had one, so she left hers with her daughter. For years she would help in the kitchen and under her breath I would hear her say, “this would be easier with a KitchenAid Mixer!” and I would just smile and take a deep breath. Between you and me, it was never the fact that I didn’t want a KitchenAid, it was that I just never wanted to spend that much money on something I would use every now and then… BOY WAS I WRONG!

I mean, one can find just about anything on eBay, right? So, I did just that… I searched and found some great options for amazing prices. So, when I began working as an eBay affiliate, I figured what better time to get a KitchenAid Mixer than now, right?

The brand new KitchenAid Mixer arrived at my door and I was super-excited. I began using it immediately to whip up Hubby’s favorite whipped potatoes and within no time I realized that I was actually using the mixer more than I thought I would. The 10-speed control gives me a range of mixing options.

The tilted head makes changing out between the metal wire whip, nylon-coated flat beater, or nylon-coated dough hook easy and once it locks back down, it is locked in place!

My favorite thing to make with my KitchenAid Mixer is my better for you Banana Nut Bread.

Anytime I have any over-ripe banana’s I whip up a batch and everyone, especially the kids, go crazy for it.

Better for you Banana Nut Bread Recipe with my KitchenAid Mixer

1 3/4 Cup Wheat Flour
1/4 Cup Flax Seed
3 Ripe Bananas
1 Teaspoon Baking Soda
1 1/2 Cups Sugar
1/2 Cup Greek Yogurt
1/4 Cup Skim Milk
1 Teaspoon Vanilla
2 Eggs
1/2 Cup Walnuts
1 Cup Dark Chocolate Chip (optional)

Now, you can mix all the dry ingredients together and the liquids together and then combine, but when I am short on time, I just throw everything except the Walnuts and Chocolate Chips in the KitchenAid Mixer. Set it on 4 for a bit and the 6. Once it is mixed well, I fold in the Walnuts and Chocolate Chips and then bake on 350 for 40 minutes.

The better for you Banana Nut Bread comes out VERY moist and soft and just melts in your mouth.
