Has this ever happened to you? You are just getting ready for bed and someone kindly reminds you that you are supposed to bring some sort of salad to your event the next day? Ugh, talk about timing, right??? HA! My biggest issue is that our fridge literally sucks and tends to freeze all my veggies so I don’t store too many, at least, not enough to make a fresh salad at the last minute. Since I am a Red Gold Tomatoes Ambassador, I always have cans on hand, so it was the perfect time to throw together my easy Summer Fiesta Salad…
Folks, this is literally the easiest salad ever, I mean, it has seven ingredients and all you have to do is throw it all in a bowl, refrigerate and then serve… Normally I choose to use the Red Gold Tex-Mex Petite Diced Tomatoes, but since I didn’t have any on hand, I used the Red Gold Tomatoes with Basil, Garlic, and Oregano. Either way, the salad is delicious.
Now, I know you may be asking who uses canned tomatoes in a salad? Well, I do… and I can tell you why… First off, if you have ever had Red Gold Tomatoes then you know that they taste like they are fresh off the vine, so that is perfect, right? Another reason I love using them is because they are precut and preseasoned, so there is not much I have to do… 🙂

Here is my Summer Fiesta Salad Ingredient List:
- Corn – frozen or canned
- Red Gold Tomatoes
- Diced cheese
- One can black beans, washed and drained
- Diced red onions
- Tablespoon cumin
- Lime juice
Once you throw it all together, refrigerate overnight or as long as you can and then serve. Keep in mind that this recipe can be mixed up when you want to… you can add a bit of mayo to make it a creamy salad or add some hot sauce to spice things up… Anyway, you do it, as long as your tomatoes taste like they are right of the vine, you are golden!
