Remember last week when I told you all the in’s and out’s on why we love Summer Citrus from South Africa? Well, I am here to not only tell you more but to share an amazing recipe I came up with, Citrus & Beet Salad!
First off, we are still all about those amazing Easy Peelers since the kids love taking them everywhere, but I have to say that we have also become quite addicted to the Navels. They are a pretty large and are so very delicious and juicy. Plus the fact that they are available through September when our local fruits are no longer in season, is a major positive!
So, since we received an abundance of Navels, I not only allowed the kids to snack on them, but I also began using them in recipes. My favorite recipe is my Citrus & Beet Salad with Gorgonzola and Pine Nuts.
First off, this salad is SOOOOO easy to make. Since both the beets and Navels from Summer Citrus from South Africa have so much natural flavoring, not too much else is needed.
Citrus & Beet Salad Ingredients:
- 2-3 Summer Citrus from South Africa Navels, peeled, and cut into bite-sized pieces
- Small bushel of steamed or roasted beets cut into bite-sized pieces
*I roast the beets by cutting the raw beets in quarters, rubbing with olive oil, and then placing them in a roasting pan on 400 for about 45 minutes until a fork goes through them easily. Once finished, I remove from the oven and place then in cold water, while I use a paper towel to remove the skin. Once they are cooled off, I cut them into smaller pieces.
- 1/2 Cup of Gorgonzola Cheese or Blue Cheese, whichever you prefer
- 1/4 Cup Pine Nuts
- 1 Table Spoon Basil
Start with the beets and place them in a bowl, then add the cut up Navels, Gorgonzola, and pine nuts. Top with basil and serve.
Note that though the dish tastes better the longer it is refridgerated since all the juices seem to come together, please keep in mind that the beets will color the beautiful Summer Citrus from South Africa Navels, so if you plan to serve to a crowd, I suggest serving your Citrus and Beet Salad immediately.
