As you know, I find it very important to share a family meal. Not only does it give us, as a family, a chance to discuss schedules and days, it also helps build a strong family relationship. One of the most important parts of having a family meal is the main dish. We enjoy one that is delicious, hearty, filling, and knowing that our meal helps crush hunger in families, in need is a major plus. This is just one of the many reasons we cook with Red Gold Tomatoes.

Remember a while back I told you about how excited I was to become a Red Gold Tomatoes Ambassador and how I was able to make a trip to one of the Red Gold Tomatoes farms and factory? Well, since that trip I have been Red Gold’s number one fan. I mean, who wouldn’t be in love with a family-owned company that understands the value of doing things the right way, using the highest-quality, freshest, best-tasting tomatoes? Not only that but a company that goes out of their way to support the same causes we do? This is why I wasn’t surprised to learn about Red Gold is helping families in need. You see, through the month of October, for each product purchased, Red Gold will donate one meal to someone in need through Feeding America® food banks.


It saddens me that so many families are still hungry. The FACT is…Hunger Does Not Discriminate:

  • According to Feeding America, hunger touches every county in America.
  • Today, 48 million Americans are food insecure, including 15 million children and 12 million families.
  • 1 in 7 Americans live in households where they don’t know where their next meal is coming from.

Thankfully, we can all CRUSH HUNGER by sharing a Family Meal, like my Not Your Mama’s Mac and Meat Casserole. Remember, by purchasing a can of Red Gold Tomatoes,  Red Gold will donate one meal to someone in need – with a goal of 1.7 million meals donated to Feeding America food banks.

Here are two ways YOU CAN participate:
  1. Go in-store and purchase Red Gold, Redpack, Tuttorosso, or Sacramento canned tomato products, and Red Gold will donate one meal to Feeding America food banks for each product purchased.

Sounds like a good plan, right? Well, to get you started, I wanted to share my ‘Not Your Mama’s Mac and Meat’ Recipe:

Mac and Meat Ingredients: {I cook for eight people, so I make a huge casserole, for smaller meals, feel free to cut the ingredients in half}

  • 2 Pounds Cooked Ground Beef
  • 2 Pounds Cooked Macaroni with 2 Tablespoons Melted Butter
  • 1 Can Red Gold Stewed Tomatoes
  • 1 Can Red Gold Basil, Garlic & Oregano Diced Tomatoes
  • 2 Cups Shredded Cheddar
  • 1 LB Colby Cheese, thinly sliced

Preheat oven to 400 degrees. Spray your casserole dish with non-stick spray or butter and set it aside. Combine ground beef and 3/4 of the shredded cheddar cheese with the macaroni. Once the cheese begins melting add in both cans of Red Gold Tomatoes {do not drain}.

Mix well and then get ready to layer your casserole. Begin by adding one layer of the macaroni mix and then add a layer of the sliced Colby Cheese.layer-mac-and-meat

Continue layering until all of your mac and meat mixture is gone and your top your casserole with Colby cheese. Sprinkle with the last 1/4 cup of cheddar and then cover with foil and bake for 40 minutes until the cheese is bubbling. Remove from the oven, let sit for about 5 minutes and then serve.
